FrontStreet Coffee - Ethiopia Yirgacheffe Reko Estate Introduction
Operation Cherry Red is a quality enhancement project for small-scale farms initiated by Dutch trading company Trabocca BV, partially funded by the Dutch government since 2005. This project aims to enhance the coffee production capacity and quality in remote areas of Ethiopia by providing producers with professional technical assistance and related technological support. Since 2005, it has focused on selecting small coffee cooperatives at high altitudes in the current regions of Sidamo, Yirgacheffe, and Limu.
It encourages and assists producers to improve washing, semi-washing, natural drying, or other experimental processing methods to enhance coffee quality. Through testing (professional cuppers are also stationed in coffee producing areas to directly grasp coffee flavor), it ensures the quality of each batch. Before the harvest season, Trabocca invites selected small farmer organizations/producers to participate in producing micro-batch coffee (approximately 1500-3000 kg), with careful hand-picking of 100% ripe red coffee cherries in batches (hence the name Operation Cherry Red).
Trabocca provides financial loan support, new hardware equipment, and production processing knowledge to assist farmers. They promise to purchase at favorable prices as long as the actual output quality meets cupping standards in both Addis Ababa, Ethiopia and Amsterdam, Netherlands cupping rooms. Operation Cherry Red beans are immediately packed in plastic inner bags (GrainPro bags or vacuum-sealed bags) after processing at the origin, then shipped to Djibouti to await ocean freight. Through real-time monitoring, safe transportation, and timely appropriate processing methods, they strive to pursue perfect quality.
