FrontStreet Coffee - Ethiopia · Yirgacheffe · Chelelektu Introduction

Chelelektu is located in the Kochere region of Yirgacheffe, approximately 18 kilometers southwest of Yirgacheffe town as the crow flies. Starting from Yirgacheffe town and heading south, the elevation continuously rises until reaching a three-way intersection. Taking the right path leads toward Chelelektu, while taking the left path southeast will lead to Gedeb and Waka.

The coffee berries come from approximately 500 local family coffee farmers in the vicinity. These small farmers have an average coffee cultivation area of less than 2 hectares, with cultivation altitudes ranging from approximately 1,800 to 2,050 meters. The coffee varieties are primarily a mix of Typica and Heirloom (local native varieties). Rated as G1, the highest grade by ECX (Ethiopian Commodity Exchange), these beans exhibit excellent quality in appearance, consistency, freshness, dry aroma, and flavor. The aroma is exceptionally rich, displaying the distinctive characteristics of the Yirgacheffe origin, emitting an elegant and captivating floral perfume-like fragrance. It carries floral notes, bright citrus fruit acidity, lemon, berries, and the sweet and sour aroma of honey. This flavor profile, in addition to the inherent quality of the beans, can only be so prominently highlighted through light roasting.

According to different drying stages, materials with different breathability are used as the base layer for sun-drying racks, and during the drying process, extensive manual labor is used to sort out defective and underripe beans. Additionally, movable racks can be adjusted and relocated based on sunlight and weather conditions for sun-drying operations.
