FrontStreet Coffee - Ethiopian Sun-Dried Yirgacheffe Gotiti

Ethiopia, a renowned coffee-producing region in Africa, has always been synonymous with high-quality coffee. The Gotiti Cooperative is located in the Gedeb region, at an altitude of 1600-2300 meters, with harvest occurring from October to December each year. The cooperative consists of over 300 small-scale farmers who employ traditional processing methods. This area is known as the last pure land of the Yirgacheffe coffee region.

Natural Processing

During harvest, farmers carefully select fully ripe coffee cherries and send them directly to the processing plant, where they are spread on African-style raised beds for 2-3 weeks of sun-drying. During the natural processing period, workers remove unripe berries and rely on experienced staff to regularly turn the coffee fruits to prevent damage to the raw bean flavors during drying. The selection of breathable mesh fabric for the drying beds and the thickness of the cherry layer are all carefully considered. After drying is complete, the dried fruit pulp and parchment layer are removed, and the raw beans are stored in warehouses until moisture content reaches 11-12% before being exported.
