When it comes to whether roasted coffee should be sold in one-way valve bags, many customers now open the beans immediately upon receiving them. After opening, the bag's seal is no longer as strong, and after multiple openings, the one-way valve seems to lose its effectiveness. In that case, couldn't we just use bags without one-way valves for delivery?
During the first few days of the coffee cycle, beans enter an aging period where they begin releasing carbon dioxide and undergo chemical changes including lipids, carbohydrates, amino acids, water, and proteins. This process is most vigorous within five to seven days, then gradually diminishes. The one-way exhaust valve prevents air from entering the bag from outside - avoiding moisture or contaminated gases from entering while allowing released carbon dioxide to escape, preventing pressure buildup inside the bag that would prevent some roasted coffee beans from releasing gas.
The one-way exhaust valve isn't as magical as some might think. After manually disassembling a one-way exhaust valve, students found that it's not 100% one-way - with some extreme methods, gas can still be forced back through. However, under normal non-violent conditions, it works reliably.
In terms of flavor, coffee beans stored in one-way valve bags compared to those in sealed containers show that after the aging process is complete, beans in one-way valve bags demonstrate slightly superior flavor characteristics.
After the beans have finished degassing, if you choose to store them in one-way valve bags, it's recommended to seal the one-way valve with transparent tape. Therefore, when packaging with one-way valves for sealing and delivery to customers via express delivery, one-way valves are a good choice.
When beans arrive via delivery, the second consideration is storage. For bean storage, we recommend avoiding light, moisture, sealing, and odor contamination.
There's a basic test: if you grab a handful of beans to grind and smell them, initially you'll notice a roasting aroma (to me, a fire-roasted smell). After proper aging, they'll have rich coffee flavors (floral, fruity, nutty, chocolate notes, depending on the bean's inherent characteristics). Beans still in the aging process will smell muted, with flavors not yet fully developed.
