FrontStreet Coffee - How to Rest Coffee Beans
Do you usually rest your coffee beans? Whether it's for pour-over or espresso, brewing immediately after roasting is not ideal, as coffee that hasn't undergone a resting period often doesn't develop optimal flavors.
1. What is Coffee Bean Resting
Coffee bean resting refers to the process where roasted beans, stored in sealed coffee bags, release carbon dioxide and other gases produced during roasting. Through several days of resting, the various compounds within the coffee beans stabilize.
The coffee bags we use for storage feature one-way degassing valves. These valves allow gases to escape from the bag while preventing external air from entering. The advantage is that coffee can avoid contact with air before opening, and most bags are also light-proof.
Some might wonder: why do some coffee shops store their beans in transparent containers? This is because the beans have already completed their resting period. At this stage, baristas don't want the coffee beans to continue degassing, as whether during resting or the optimal tasting period, coffee beans continuously release aromatic compounds into the air. Unfortunately, baristas don't have magical powers and can't use vacuum sealing, so they opt for sealed containers to minimize the loss of aromatic compounds as much as possible. Additionally, these sealed containers are always stored away from light.
Some roasters conduct cupping immediately after roasting, which eliminates the resting period concept. They might cup right after roasting or wait a day. Because cupping has a unique methodology that presents both the good and bad aspects of coffee, it serves as a revealing mirror that isn't concerned with whether the beans have been properly rested.
Other brewing methods are quite different. Pour-over, siphon, French press, and AeroPress all place great importance on bean resting. The brewing method most affected by resting is espresso machines. Fresher coffee beans are more difficult to extract because the excessive carbon dioxide significantly hinders water's ability to extract flavors from the coffee grounds.
Coffee brewed immediately after roasting without resting tastes more astringent, with less pronounced flavors and an overall less rounded profile compared to properly rested coffee.
