Just as tea has its "tea ceremony," coffee also has its "coffee ceremony." Some aspects are interconnected, such as preheating equipment and water temperature.
Regarding coffee taste, many Chinese people have a major misconception—that coffee is simply bitter. Perhaps the earliest coffee to enter China was of poor quality, creating a preconceived notion. Some friends may not even know what good coffee tastes like.
From Blue Mountain to Yirgacheffe, from quick American-style coffee to meticulously crafted pour-over, your pursuit of coffee is always unwavering. There is a coffee bean called Geisha that I believe can satisfy all your coffee fantasies.
Every coffee enthusiast who has tried Geisha experiences a stunning sensation on their taste buds that lingers in their memory. Geisha possesses an incredible aroma, almost perfume-like, with notes of rose, jasmine, and bergamot. The delicate flavor and persistent aftertaste are unforgettable, with discernible notes of lime, honey, and papaya—deep and rich fruit flavors.
This Panama natural Geisha offers multiple layers of delicate and distinct flavors. The dry aroma presents prominent floral notes. After blooming, the scents of orange blossom, ginger flower, and dried rose become even more pronounced. Once brewing is complete, a coffee full of floral aroma emerges. As the temperature slightly cools, you'll experience abundant notes of French rose tea, bergamot, and sweet orange.
Pour-over Parameters
Medium grind: BG-6S, 92°C water temperature, extracted in three stages
1:15 Ratio Presentation
French rose floral aroma, jasmine green tea, fruity sweetness, with a persistent and lasting green tea fragrance in the aftertaste. Multiple layers of delicate and refined flavors.
1:16 Ratio Presentation
Ginger flower and orange blossom notes are prominent. When drinking, it presents a floral tea sensation similar to jasmine green tea, with the aroma of orange blossom and honeysuckle, a sweet aftertaste reminiscent of brown sugar, and a long-lasting finish.
Brewing Recommendation
Use 15 grams of coffee with 92°C water temperature, a V60 dripper, and a water-to-coffee ratio of 1:15. First pour 30g of water and let it bloom for 30 seconds. For the second pour, add 104g of water, then continue to 225g total. Avoid using the final tail portion of the extraction. Total extraction time should be around 2:00 minutes.
The parameters for these two brewing methods differ, so adjustments can be made according to guests' taste preferences.
