Introduction to Ethiopian Coffee by FrontStreet Coffee
Africa is the third-largest continent in global coffee production, following Central and South America and Asia. African specialty beans are primarily from Ethiopia, Kenya, and Yemen. Ethiopia is Africa's largest Arabica-producing country. Yemen, located at the southern end of the Arabian Peninsula and facing Ethiopia across the Gulf of Aden, though situated in West Asia, has historically been classified as part of the African coffee-growing region.
Ethiopia, officially the Federal Democratic Republic of Ethiopia (formerly "Abyssinia"), is a country located in northeastern Africa.
Ethiopia is one of the main producers of Arabica coffee in Africa and is recognized as the birthplace of coffee. Ethiopia's native Heirloom varieties, as ancient and high-quality coffee cultivars, consistently demonstrate unique characteristics across various Ethiopian growing regions.
Arabica coffee was most likely first discovered in southern Sudan, but it wasn't until it spread to Ethiopia that it gradually flourished. The people there began consuming coffee fruits, initially as fruits rather than beverages. Yemen was the first country to cultivate coffee trees as plants, but Ethiopia had been gathering wild coffee fruits even earlier.
Yirga Cheffe is a small town in eastern Ethiopia, situated at an altitude of 1,800-2,000 meters. In the local language, "Yirga" means "settle down" and "Cheffe" means "wetland." Yirga Cheffe belongs to the Sidamo growing region and is highly cherished among specialty coffee enthusiasts worldwide for its unique jasmine fragrance and citrus acidity. This distinctive flavor profile is celebrated as the "Yirga Cheffe" taste. Based on green bean defect rates, Yirga Cheffe is classified into five grades from G1 to G5, from best to worst. It's typically processed using the washed method, but a small amount of exceptional beans is intentionally processed using the natural method to enhance their charming fruity aroma and body.
