Here's a story everyone knows: in the Old Testament's Book of Genesis, Adam and Eve were expelled from the Garden of Eden for eating the "forbidden fruit" from the "Tree of Knowledge."

Scholars still debate what the forbidden fruit actually was—grapes, apples, and everything in between. But one theory has won wide acceptance: that the "Tree of Knowledge" was the coffee tree, and the forbidden fruit was the coffee cherry.

Many newcomers to specialty coffee misunderstand Yirgacheffe, thinking it and Sidamo are two separate growing regions. In fact, Yirgacheffe is a coffee town in Ethiopia's Sidamo region, sitting at 1,700-2,100 meters. Because the coffee there showed exceptionally distinctive floral and citrus character, the Ethiopian government specially approved it as an "independent entity," and it quickly became the most celebrated growing region in all of Africa.

Jasmine florals, citrus, lemon, peach, almond, and tea notes are the most defining characteristics of Yirgacheffe coffee.

Brew it V60-style: 15g of coffee at 1:15, water at 90-91°C, a fine-sugar grind (80% through a #20 sieve), with a 30g / 30-second bloom, a pour to 125g, and a final pour to 225g.

Then go deeper: the Washed Konga (Guodingding) Cooperative from the Worka area of southeastern Yirgacheffe adds cleaner citrus-lemon clarity and graceful white florals, while the Natural Red Cherry, dried as whole ripe cherries on raised beds and turned every 2-3 hours, layers tropical fruit over the classic profile—citrus-like acidity, berry juiciness, honeyed sweetness, and a cream-smooth finish.
