The cultivation of coffee trees in Nicaragua also benefited from the Spanish colonizers of the eighteenth century. High-quality Java coffee, originating from Africa and improved in Indonesia, found the ideal growing environment in the high-altitude regions of northern Nicaragua. Today, coffee has become one of the economic pillars of this small Central American country. The Java coffee grown here has been further improved in Nicaragua, resulting in coffee beans that are large, elongated in shape, and have a more distinctive flavor than typical Java coffee varieties.

Coffee beans processed using the honey method (removing the coffee fruit skin while retaining the mucilage layer for sun-drying and refinement) retain more berry flavor and sweetness. They not only have the aroma of lemon and citrus but also taste sweet with mild fruit acidity, and carry a scent similar to red date tea. This makes them particularly suitable for coffee enthusiasts who seek balanced flavors and don't appreciate prominent acidity.

Dipilto is one of the smallest municipalities in Nicaragua, covering an area of 106 square kilometers. With a population of about 5,000 people, 90% live in rural areas. Dipilto is known for its pine forests, warm climate, and the devout religious beliefs of its people. With less than 3,000 hectares of coffee cultivation area, this small municipality is considered a pioneer of specialty coffee in Nicaragua. Fertile soil is one of the foundations for good coffee cultivation locally. High altitude and pleasant climate provide favorable conditions for traditional varieties (Caturra, Bourbon). Las Maria village is no exception.
