Yellow Pacamara is a variety of traditional Pacamara. It is said to have been first discovered and standardized for cultivation by the Mierisch family in Nicaragua. Its yield is very low and it is difficult to popularize, so it is still relatively rare at present.
Here is a heavyweight coffee estate worth introducing - Lemon Tree (El Limoncillo). The estate is located in the Matagalpa plateau region at an altitude of 950-1300 meters. Many tall coniferous forests surround the planted coffee trees, providing shade for the coffee trees' growth. This allows the coffee trees to receive sunlight while avoiding damage to the plants from the scorching sun.
To ensure the quality of the coffee, manual picking methods are used during the coffee fruit harvesting stage, picking fully ripe fruits one by one. Picking usually needs to be completed in three passes. Although manual picking has high labor costs and low picking efficiency, it can greatly protect the plants from damage during the picking process, and ripe fruits will have better sweetness. The producers' efforts were not in vain - Lemon Tree Estate's coffee won second place in the 2008 Nicaragua Cup of Excellence (COE) national competition. This bean has a beautiful appearance, delicate and rich flavors after washed processing, with aromas of fruit, vanilla, and cream, gaining fame and attention from then on.
Lemon Tree Estate also processes coffee using honey processing methods. After the coffee fruits are picked, the coffee with the outer pulp removed is placed on African beds for drying. Compared to the traditional method of placing coffee directly on the ground for drying, using African beds to dry coffee reduces contamination during the drying process, avoids producing more off-flavors, and ultimately improves coffee quality. Honey-processed coffee beans have more charming tropical fruit flavors.
