As we all know, Ethiopian coffee has always been synonymous with specialty coffee and is one of the world's finest coffees. Ethiopia is also the birthplace of coffee. Ethiopian coffees are basically named after their producing regions. For example, the most well-known Yirgacheffe region produces Yirgacheffe coffee, the Sidamo region produces Sidamo coffee, and so on.
The industry in the Sidamo region is primarily based on agriculture, with coffee growing areas mainly located around the Great Rift Valley. The altitude ranges from 1,500 to 2,200 meters, featuring high altitude, abundant sunshine, and plentiful rainfall.
The greatest advantage of this region lies in its soil fertility, which is maintained through the cycling of organic matter, using fallen leaves from surrounding trees or plant roots as fertilizer. This original ecological growth environment creates distinct differences and characteristics in the coffee produced by each town.
The processing method of coffee profoundly affects its flavor expression, and Sidamo coffee is no exception. Washed Sidamo coffee has a distinctive bright and clean taste, with fresh fruit flavors, straightforward floral notes, and a bright, clear texture.
Sidamo encompasses more coffee varieties than Yirgacheffe. The principle is actually quite simple: Sidamo is a province in Ethiopia, while Yirgacheffe is part of Sidamo province. Sidamo coffee beans are grown at approximately 2,100 meters, slightly lower than Yirgacheffe, but has produced many famous coffees such as Hana Guji, Chermo, Honey Kiss, and others. These varieties share a common characteristic: strong floral notes, high sweetness, medium acidity, low bitterness, and flavor profiles that lean more toward mature fruits. Natural processed Sidamo Hana Guji flavors lean toward relatively mature fruits like jasmine and blueberry.
The Sidamo producing region is located in southern Ethiopia, where the industry is primarily agricultural, with coffee growing areas situated around the Great Rift Valley. The largest city in Sidamo is Hawassa, which was an important coffee export distribution center. Sidamo's coffee flavors are very diverse because different soil compositions and climate characteristics have created obvious differences and specialties in the coffee produced by each town region.
