FrontStreet Coffee - El Salvador Coffee Characteristics

El Salvador is located in the northern part of Central America. It borders Honduras to the north, the Pacific Ocean to the south, Guatemala to the west and northwest, and the Pacific Gulf of Fonseca to the east. It is the smallest and most densely populated country in Central America. The terrain is dominated by mountains and plateaus, with many volcanoes. The Santa Ana active volcano, at an altitude of 2,385 meters, is the highest peak in the country; the northern part is the Lempa River valley; the southern part is a narrow coastal plain. The climate is tropical savanna. The plain areas have a tropical rainforest climate, while the mountainous areas have a subtropical forest climate. The average annual temperature is 25-28°C, with annual precipitation in mountainous areas above 1,800 mm, and about 1,000 mm in coastal areas. May to October is the rainy season.

Salvadorans have been growing coffee beans for generations. With their unique flavors, Salvadoran coffee is loved by people around the world. The Salvadoran coffee you drink comes from such a small American country, natural and rustic, yet full of vitality.

At its peak, El Salvador's coffee production once made it the fourth largest coffee-producing country in the world. However, decades of civil war nearly crippled the coffee industry. Fortunately, the war has stopped in recent years, and the coffee industry has also regained its vitality. The only benefit the civil war brought to El Salvador was that farmers left their fields barren, failing to catch up with the most popular Catimor sun exposure cultivation trend of the past two decades. Therefore, they preserved the ancient Bourbon and Typica varieties. This means that El Salvador still uses the most traditional shade-grown cultivation method, which has a positive effect on enhancing the aroma of coffee.

In 2005, the Salvadoran hybrid variety Pacamara made a impressive showing in the COE (Cup of Excellence, a specialty coffee rating system), confusing many international cuppers who didn't know how to score it. They never expected that this hybrid bean would not only break the existing boundaries of coffee's rich aroma but also expand the visibility of Salvadoran coffee.

Overall, Salvadoran coffee inherits the mild quality of Central American coffee, being overall smooth and slightly acidic with a pleasant sweetness. At the same time, it has its own characteristics: the aromatic flavor with a hint of acidity is very gentle; pure without any off-flavors, with excellent flavor balance; the creamy chocolate-like smoothness is impressive; the dense feeling of coffee in the mouth gives the coffee a deep flavor with a long aftertaste. Recommended roasting method: medium to medium-dark.
