Coffee acidity is another selection criterion. The level of acidity is primarily related to the altitude of the growing region. Most coffee in the world comes from lower altitude regions, such as Vietnam, Indonesia, Africa, and Brazil, which all have low to medium acidity. However, Ecuador's Loja region, with altitudes ranging from 1500-2200 meters, produces exceptionally high-acidity coffee varieties that are quite rare, with naturally outstanding aroma and flavor. Ecuador also has the Galapagos Islands at medium altitudes and the lower-altitude Manabi coffee-producing region. Therefore, in this equatorial country smaller than Japan—Ecuador—one can find coffees with various acidity levels and distinct aromas, truly making it an "all-rounder" coffee-producing nation!

Main Region 1: Manabi

Altitude: 100-500 meters, Acidity: 3-5 (on a 10-point scale), Average temperature: 30°C

Main Region 2: Galapagos

Altitude: 300-450 meters, Acidity: 5-7 (on a 10-point scale), Average temperature: 25°C, with unique natural geographical conditions including convergence of cold and warm ocean currents, volcanic ash soil, and microclimates

Main Region 3: Loja

Altitude: 1500-2200 meters, Acidity: 8-9 (on a 10-point scale), Average temperature: 18-20°C

Ecuador is a large coffee-producing country and one of the few countries in the world that exports various coffee varieties: washed arabica, natural arabica, and robusta.

Due to its geographical location, Ecuador produces some of South America's best coffees, which are also the most popular in Europe. Different ecosystems allow Ecuador to have coffee plantations growing throughout the country and even in the Galapagos Islands. Arabica coffee is harvested from March to October, while robusta is harvested from February to November.

The main varieties grown in Ecuador are: Arabica, Natural Arabica, and Robusta.

Knowledge point: In northern Ecuador, Colombian and Castillo varieties from Colombia are cultivated.
