Yirgacheffe became famous for its signature citrus, lemon, and floral notes brought out by the washed processing method, also featuring black lemon tea flavors. Today, it's even more renowned for its sun-dried tropical fruit characteristics. Due to its easily recognizable flavors, Yirgacheffe is pursued by many coffee enthusiasts and has allowed many newcomers to experience tastes distinctly different from instant and espresso coffees.
Coffee beans are a type of plant fruit and also an agricultural crop. The existence of Yirgacheffe better illustrates the attribute of coffee as a fruit. The third wave of coffee has always sought to express coffee's regional terroir. Regarding this matter, looking at the coffee flavor wheel reveals that nearly half of the flavor descriptions are related to fruits.
Coffee beans have grade classifications, and now we'll discuss roasted coffee beans only. Just like when we were in school, scores above 80 are considered excellent and good, while below 80 are passing and failing. Roasted coffee beans are evaluated through cupping, and according to the unified standards of SCAA (Specialty Coffee Association of America) and SCAE (Specialty Coffee Association of Europe), a cupping score above 80 is the basic requirement for specialty coffee.
Yirgacheffe coffee is produced in Ethiopia, the birthplace of coffee. Yirgacheffe is the name of a local town with an altitude of approximately 1,700-2,100 meters. Based on different processing methods for green coffee beans, Yirgacheffe is divided into two main categories:
Category A: Washed Processing Method
The grading standard is established by the "American Specialty Coffee Association" SCAA, divided into Gr-1, Gr-2, where smaller Arabic numbers indicate higher grades. G1 Yirgacheffe has a distinctive style - the flavor of citrus and floral notes integrated into the coffee liquid is an irresistible taste for everyone.
Category B: Natural Processing Method
Grades are divided into Gr-1, Gr-3, Gr-4, Gr-5. Similarly, the highest grade G1 natural Yirgacheffe has rich fruity aromas. Opening a bag of freshly roasted G1 natural Yirgacheffe coffee can subvert everyone's original perception of coffee.
