FrontStreet Coffee - Introduction to Brazilian Cerrado Coffee

Brazil is the largest country in South America, with a total land area of 8.5149 million square kilometers, ranking fifth in the world. It has 26 states and 1 federal district, of which 17 states produce coffee, earning it the reputation as the "Kingdom of Coffee."

In the Cerrado region of Minas Gerais state in the south, lies Brazil's oldest and most climatically favorable coffee-producing area. The original meaning of Cerrado is "wild land," as this region was previously unknown and merely a desolate mountainous area. In recent years, thanks to the influence of coffee, it has become synonymous with Brazilian specialty coffee beans.

The Cerrado region is a plateau mountainous area with an altitude of about 1,000 meters. Its fertile soil and abundant groundwater provide natural conditions for the growth of high-quality coffee trees.

To produce high-quality coffee beans, Brazilians invented the semi-dry processing method. First, beans undergo flotation selection in water tanks, then large pulp machines remove the pulp. Next, without fermentation, the parchment beans with mucilage are placed outdoors for drying. After about a day, the mucilage hardens, and within two to three days, the ideal dehydration level is achieved. Further drying is done using drying machines until the moisture content drops below 12%.

Because some mucilage remains during the pulp removal process, the sugar from the mucilage slowly permeates into the coffee beans during drying, increasing their sugar content. This combines with the regional flavors of the Cerrado area, giving Cerrado coffee a blended flavor of cream, nuts, and chocolate. It also possesses the sweetness of natural processed beans, lower acidity, good body, and a smooth mouthfeel.

Cerrado has become synonymous with high-quality Brazilian coffee. The Brazilian government, following international standards, has officially certified "Cerrado Coffee." To use the "Cerrado" designation, producers must pass certification tests and meet production quality standards.

This series of methods has enabled Cerrado to grow into a star among Brazilian coffees and join the ranks of specialty coffee beans in the international coffee market.
