FrontStreet Coffee - Costa Rica Mozart Introduction
Mozart was a phenomenal genius in the music world. Along with Haydn and Beethoven, he brought the Viennese Classical School to its peak. He stayed in this world for only 35 years before leaving hastily. Despite the many hardships in his life, he composed over 600 beautiful musical pieces that touch the soul.
The coffee beans named Mozart come from Finca Canet, the highest altitude growing region in Tarrazu, Costa Rica. The plantation owner mainly grows passion fruit, with coffee beans being quite scarce, grown only in a specific area. They have launched the Musician Series products, consisting of three beans, each using different green bean processing techniques to highlight unique characteristics. Mozart is one of these beans.
Raisin honey processing is considered a form of double-fermentation honey processing. First, coffee cherries are dried to a raisin-like state, then the pulp is removed for honey processing fermentation. This method results in more intense fermentation flavors, and preserves more mucilage than other honey processing methods. The 100% mucilage honey processing truly delivers raisin flavors.
This is quite a sweet processing method, with a white wine mouthfeel and balanced acidity. The fermentation flavors are more intense, and it preserves more mucilage than other honey processing methods.

Flavor Description: Its sweetness and berry aroma will absolutely amaze you! The sweetness, consistency, and body are quite good, with a ripe fruit sweetness similar to dried bananas. Blackberry, plum, orange peel, tangerine, and raisin, with a finish of roasted almond slices and toffee sweetness. The flavor is clean and smooth.
