It should be mentioned that Ethiopia is the world's earliest country to cultivate coffee and maintain the oldest coffee culture. To this day, it still typically involves small-scale family farming and maintains very traditional and ancient coffee cultivation techniques and methods. Ethiopia in Africa can be said to be the hometown of coffee worldwide. The coffee here has a floral aroma and sweetness that is unforgettable and irresistible.

As we all know, the world-famous East African Rift Valley has always been called the cradle of humankind and is also recognized as the origin of coffee. The Ethiopian Sidamo region we're going to discuss today happens to be situated in this lush and mysterious canyon.

As the birthplace of coffee, Ethiopia possesses an unforgettable unique aroma while having distinctive and unparalleled outstanding quality. Sidamo is one of the prominent representatives. I wonder if everyone has noticed that Sidamo is often associated with Yirgacheffe. Although both come from Ethiopia, their relationship seems closer compared to other beans. This is because

Yirgacheffe originally comes from a small town called Yiga in the northwestern part of Sidamo province, but in recent years, due to Yirgacheffe's unique flavor, the area that produces Yirgacheffe has become independent and established as a separate growing region.

Unlike typical African coffees, washed varieties carry a nutty fruitiness with subtle cocoa notes, but what both have in common is a smooth mouthfeel and viscosity, comfortable and pleasant acidity and aroma. The fragrance is aromatic and mellow, with an endless aftertaste from just one drop, possessing a wild beauty. It is elegant yet playful, with a mild and pleasant entrance taste, unique and rich mouthfeel, a distinctive and pleasant sweet aftertaste, and a slowly rising finish that contains unique sweetness. Its flavor is special and its aroma is prominent.

Meanwhile, Ethiopian washed Sidamo possesses the acidity and elegant taste that can only be experienced in premium champagne, with rich fruity notes containing citrus and blueberry aromas, while the grape and chocolate notes in the finish make it even more layered and distinct.

Additionally, its acidity can serve as the main source of sweetness in espresso (the combination of sugar and acid enhances this), and it can also be used as a base for blending coffee and making good Espresso.

Knowledge point: Arabica varieties were most likely first discovered in southern Sudan, but it wasn't until they spread to Ethiopia that they gradually flourished and developed.
