I wonder if everyone has noticed that Sidamo is often associated with Yirgacheffe. Although both come from Ethiopia, their relationship seems closer compared to other beans. This is because
Yirgacheffe originally comes from a small town called Yiga in the northwestern part of Sidamo province, but in recent years, due to Yirgacheffe's unique flavor, the area that produces Yirgacheffe has become independent and established as a separate growing region.
Unlike typical African coffees, washed varieties carry a nutty fruitiness with subtle cocoa notes, but what both have in common is a smooth mouthfeel and viscosity, comfortable and pleasant acidity and aroma. The fragrance is aromatic and mellow, with an endless aftertaste from just one drop, possessing a wild beauty. It is elegant yet playful, with a mild and pleasant entrance taste, unique and rich mouthfeel, a distinctive and pleasant sweet aftertaste, and a slowly rising finish that contains unique sweetness. Its flavor is special and its aroma is prominent.
Meanwhile, Ethiopian washed Sidamo possesses the acidity and elegant taste that can only be experienced in premium champagne, with rich fruity notes containing citrus and blueberry aromas, while the grape and chocolate notes in the finish make it even more layered and distinct.
