Yirgacheffe. Yirgacheffe is a local town with an altitude of approximately 1700-2100 meters. Yirgacheffe belongs to the Arabica bean species. Although the beans are small, they are remarkably impressive and offer a single-origin coffee with rich flavor characteristics. Typically, these beans are lightly roasted. Light roasting reveals unique qualities of lemon, floral notes, and honey-like sweetness, with soft and bright citrus-like fruit acidity.

Because of its uniqueness, owners and baristas can't help but recommend this coffee to their customers. Because it's unique, it allows customers to discover for the first time that coffee doesn't have to be bitter—it can also be sour and sweet! This is why Yirgacheffe has become so famous. More and more people are developing a taste for specialty coffee, which makes us baristas very happy! I personally began to appreciate coffee and specialty coffee after trying Yirgacheffe, and gradually started to understand and learn more about specialty coffee.

Washed Yirgacheffe

Jasmine floral aroma, lemon or lime fragrance.

Natural Yirgacheffe

Light fermented wine aroma, spicy fragrance.

Taste Differences

Washed Yirgacheffe

The washed processing method results in brighter acidity, similar to lemon acid, with a cleaner taste and more pronounced citrus notes. The finish has some black tea-like characteristics.

Natural Yirgacheffe

The natural process is more complex, with light fermented wine notes and slightly heavier roasted bitterness. The taste is richer, with honey-like sweetness and some spice notes reminiscent of cocoa powder and chocolate flavors. It has a full body and a long-lasting aftertaste.

Similarities

Both varieties will have fruity acidity similar to lemon and citrus fruits. This is what we often refer to when discussing whether this coffee has obvious fruit acidity. It's also said to have fruit acid flavors, and some other varieties can even reveal cherry, orange, and various other fruit flavors.

The Arabica species was most likely first discovered in southern Sudan, but it wasn't until it spread to Ethiopia that it began to truly flourish.
