Introduction to FrontStreet Coffee's Whiskey Barrel Processing Method

Traditional coffee processing methods are divided into washed, natural, and honey processes. As mentioned in previous guides, the differences between these three processing methods can be simplified to the amount of mucilage and fruit skin retained, as well as the uniformity of fermentation. The oak barrel method can be considered a variation of the washed process.

Therefore, in the washed stage, all mucilage and fruit skin are removed, then the coffee is dried in the sun. Since there's no mucilage or fruit skin during this process, the fruity sweetness is relatively reduced, and the drying and fermentation environment is more uniform, resulting in a typically cleaner taste!

In the Masaguara region of Honduras, this stage uses traditional washing methods, soaking in water for more than ten hours to remove the mucilage layer, then slightly drying before placing it under a rain shelter to air dry naturally. Regular washed processing stops at this step.

However, what we're discussing today is that the oak barrel method is a variation of the washed process. After drying, the crucial step is to place the coffee in oak barrels for containment. Coffee farmers first sort the coffee beans by size, keeping only beans around 7mm in size, and place them in rum oak barrels, soaking for approximately three months. Although wine barrels are used for fermentation, the coffee beans processed with this method do not contain alcohol, so there's no need to worry about drunk driving after consumption.

Approximately every 30 days, a batch is taken out for flavor testing to check if it meets expected standards.
