Typica: The most classic premium Arabica variety, from which many commercial improved varieties currently originate. It exhibits excellent flavor characteristics and is recognized as a specialty coffee variety, but with extremely low yields and high susceptibility to rust disease, requiring more intensive human management. Typica coffee originates from Ethiopia and southeastern Sudan, and is the most widely cultivated coffee variety in the Western Hemisphere. The plants are relatively robust but not tolerant to direct sunlight, with higher yields in Hawaii. The top leaves of Typica are copper-colored, earning it the name "red-top coffee."
Unlike other coffee varieties, Typica coffee fruits are cone-shaped. Typica coffee is of extremely high quality, making it highly favored by plantations worldwide. When properly cultivated, Typica coffee exhibits high sweetness, pure flavor, and pleasant acidity.
Mandheling, also known as "Sumatra Coffee," mostly produces Gayo in northern Sumatra, primarily of the Ateng variety. The northern Lake Tawar region can be called Aceh coffee or Lake Tawar coffee, while the southern Sumatra region around Lintong and Lake Toba can be called Mandheling. The Lintong area is the true Mandheling producing region. The best Mandheling varieties include four types: Sidikalang, Bergendar, Siborong Borong, and Telok Sanggul.
Lake Toba, located in central North Sumatra Province. In 1888, Dutch colonists moved "Java Mandheling" north to the Lake Toba region, creating the modern Mandheling legend.
Lake Tawar, located in central Aceh Special Autonomous Region. Situated at the northern tip of Sumatra Island, its area is less than one-tenth of Lake Toba. However, in recent years, its coffee quality and yield have surpassed Lake Toba.
