First, identify by origin. The variety of Blue Mountain coffee is the native Typica species. Compared to other varieties that have undergone various hybridizations, it has lower yields and specific requirements for growing conditions. The taste of this variety grown in other regions is far from that of Blue Mountain. Blue Mountain coffee production is not abundant, with only about 40,000 bags annually. Furthermore, 90% of the production is controlled by Japanese companies because of their long-term investment and priority purchasing rights for Blue Mountain coffee. The remaining 10% is shared among other countries. Therefore, purchasing Blue Mountain coffee is quite difficult.
Jamaica Blue Mountain coffee is one of the world's famous island coffees, with the Typica variety. Actually, the flavor of Blue Mountain coffee is very easy to identify - it's the very traditional, classical dark chocolate flavor unique to Typica coffee. Not milk chocolate, but dark chocolate flavor with a purity of 92% or higher, which is brought by the pure Typica variety. Typica coffee is very susceptible to leaf rust disease. Originally, Typica coffee widely planted in Central and South America was continuously replaced due to the prevalence of leaf rust disease. However, Jamaica, with its unique geographical advantages, still has Typica as the main cultivated variety here, with a very low incidence of leaf rust disease.

Jamaica Blue Mountain coffee perfectly blends the unique flavors of coffee - sour, bitter, sweet, and mellow - creating a balanced, smooth, and rich taste with a noticeable sweet aftertaste that stimulates saliva production. The best roast is medium roast (Medium Roast), which can maximally preserve the unique flavor of Blue Mountain coffee.
Because Jamaica is an island nation in the Caribbean Sea, Blue Mountain coffee does not have the advantage of high altitude in cultivation, so it lacks the pleasant bright acidity of Central American high-altitude coffees. Mild and low acidity are its characteristics, despite Blue Mountain's soil also being volcanic rock soil. Because the growing altitude is not high, the body of Blue Mountain coffee is medium. We should not describe Jamaica Blue Mountain coffee as "full-bodied" but rather as "mellow."
Since the beginning of cultivation, Jamaica Blue Mountain has consistently adhered to the fully washed processing method. Jamaicans are quite rigid about this - they absolutely refuse to process Blue Mountain coffee cherries using different methods, which has also brought delicate and smooth sensory characteristics to Jamaica Blue Mountain coffee. As is well known, Japan is the main consumer of Jamaica Blue Mountain. The reason is not its distinguished origin but rather its flavor characteristics of low bitterness, mellowness, and low acidity, which better align with Japanese sensory preferences for coffee.
