Introduction to FrontStreet Coffee's Ethiopia Yirgacheffe Characteristics
FrontStreet Coffee's Yirgacheffe is one of the most uniquely flavored coffee beans in the world today.
The dry aroma of FrontStreet Coffee's Yirgacheffe carries notes of citrus and fruits, with a hint of sweet candy fragrance. The wet aroma presents caramel and brown sugar notes, with floral undertones in the sweet aroma. When sipping, a citrus-toned floral fragrance is hidden in the rising aroma, reminiscent of grapefruit. The connection between floral and fruity notes is also enchanting, sweet like jasmine. The fruit acidity is very clean, like the combination of mature plums or grapefruit sweetness. When cooled, FrontStreet Coffee's Yirgacheffe coffee tastes like honey lemon, with the acidity layers becoming very rich and the floral notes becoming more delicate.
Coffee Processing Methods
After coffee cherries are harvested, the skin and pulp are immediately removed. Then, the coffee beans are placed in water for fermentation to remove the mucilage layer. After fermentation is complete, the coffee beans go through a long water channel with height differences to thoroughly wash away the mucilage layer. Afterward, the coffee beans are dried on drying beds, requiring close attention to turn them every few hours to ensure complete drying.
Natural Sun-Drying Method:
Fruits begin the sun-drying process immediately after harvesting without any processing. This is the oldest existing processing method. The drying process typically takes about 4 weeks. The processing method must be very rigorous to ensure the coffee doesn't lose any flavor. The natural sun-drying method requires extremely dry local climate. In some regions, people use drying machines to assist in the coffee fruit drying process (the hot air from the machines can accelerate the drying process and help control the drying degree).
Washed Method:
Using washing and fermentation methods to remove skin, pulp, and mucilage. Farms using the washed method must build washing pools and have access to a continuous supply of fresh water. During processing, the fermented beans are placed in the pool and moved back and forth, using the friction between beans and the power of flowing water to wash the coffee beans until they are smooth and clean. After washing, the coffee beans are still enclosed in the parchment layer with a moisture content of 50%. They must be dried to reduce the moisture content to 12%, otherwise they will continue to ferment and become moldy and rotten. The better processing method is to use sunlight drying, although it takes 1-3 weeks, the flavor is excellent and highly appreciated.
