Coffee Bean Varieties and Origins - Yellow Catuai: The Hybrid Genetics of Delicate, Clean, and Bright Acidity

Coffee beans produced in the high-altitude regions of Costa Rica are world-renowned for their rich, mild flavor yet intense acidity. The coffee beans here are carefully processed, which is why they achieve such high quality. Tarrazú, located south of Costa Rica's capital San José, is one of the country's most valued coffee-growing regions. Tarrazú is one of the world's major coffee-producing areas.
Coffee is an important economic source for Costa Rica. Since its introduction in 1808, it has a 200-year cultivation history. One-third of Costa Rica's population is engaged in coffee-related industries. Costa Ricans say that coffee has transformed their country, contributing remarkably to the prosperous environment they enjoy today.
Although Costa Rica's land area ranks third from the bottom in Central America, its economic environment surpasses that of more than half the countries in the region. Due to the people's prosperity and social stability, there is also capacity to focus on environmental issues, with over 30 national parks established within the country.
Yellow Catuai Variety
Yellow Catuai comes from a hybrid of Mundo Novo and Caturra, first cultivated in 1949 by Brazil's Instituto Agronômico de Campinas. Like Red Catuai (Catuai rojo), Yellow Catuai has extremely high disease resistance and is suitable for cultivation in high-altitude and windy areas. Both Catuai varieties also have very delicate and clean acidity. Through machine adjustments, they produce honey-processed coffee in both red and yellow honey treatments (depending on the degree of honey processing).
The coffee quantity is quite scarce, with coffee grown only in specific regions that receive special care, harvesting only mature red cherry fruits. Yellow honey processing involves removing the coffee cherry skin while leaving 40% of the sticky pulp, followed by drying treatment. The pulp layer and pectin layer are then removed before storage. During drying, the beans require frequent turning to prevent the pulp from sticking together and causing mold, and need to be dried quickly to avoid over-fermentation.
Beethoven Coffee
The unique Yellow Catuai variety in the estate is named Beethoven because it possesses bright acidity and excellent sweetness, much like the musician Beethoven himself—small in stature but rich and varied in flavor. The front notes release sugarcane sweetness and abundant fruit aroma, while the entry is clear, gentle, and full-bodied. Amidst subtle acidity emerges fine sweetness, with an excellent, delicate, and lingering aftertaste. The soft, delicate, and lingering aroma is the ultimate expression of Beethoven coffee.

Arabica coffee is generally believed to originate from the Ethiopian highlands and is widely distributed in tropical regions. Through repeated mutations and breeding, it has derived numerous varieties.
