Staff from the Federacion Nacional de Cafeteos de Colombia, commonly known as [FNC] in the industry, introduced Colombia's two main coffee varieties: Caturra and Colombia.

Caturra was introduced from Brazil in the 1960s and currently accounts for 45-50% of Colombia's production, having replaced the earliest Typica variety.

The new variety named after the country, "Colombia," is a hybrid coffee developed in the 1980s, with Caturra and Timor lineage - essentially the notorious Catimor. However, [FNC] insists that although Colombia is a direct descendant of Catimor, its flavor is far more elegant than typical Catimor because Colombia has undergone multiple generations of "backcrossing" with Arabica, washing away the musty smell of Robusta beans. Its flavor more closely resembles Arabica while maintaining Robusta's disease resistance and high yield advantages, making it a powerful tool for increasing Colombia's production.

High-Altitude Colombian Caturra Coffee

In the washed processing method, the coffee cherry skin containing two coffee seeds (coffee beans) is removed, and fermentation and clean water are used to eliminate the fruit pulp surrounding the coffee beans, hence the name "washed processing." When processed properly, this method yields exceptionally clean coffee. Using this coffee for espresso, you'll experience rich flavors of dark chocolate, maple syrup, and toffee. Making Americano or latte with it reveals even more delicate flavors, with a pleasant and long-lasting aftertaste.

Colombia is renowned as the best producing region in Central America, where coffee farmers have passed down the craftsmanship of coffee cultivation and processing through generations, bringing stunning high-altitude coffee beans. Due to cultivation at altitudes ranging from 1,200 to 1,800 meters and extensive natural tropical shade forests, Colombia's coffee cherries mature very slowly, thereby developing a dense molecular structure that brings rich, complex flavors and high sweetness after careful roasting.
