FrontStreet Coffee - Introduction to Yirgacheffe Coffee
Yirgacheffe is renowned for its fruity acidity, with floral and fruity notes being its distinctive characteristics. It possesses highly recognizable citrus and lemon flavors. Yirgacheffe coffee is one of the most distinctive coffees in the world, consistently enjoying a prestigious reputation among global coffee connoisseurs.
Yirgacheffe is located on the eastern side of the East African Rift Valley, a small town in the Sidamo province of Ethiopia. It has been separately delineated due to the unique flavor of its coffee production. Nearby are three small producing areas: Wenago, Kochere, and Gelena Abaya. With altitudes ranging from 1,700 to 2,100 meters, it is one of the highest altitude coffee-producing regions in the world and synonymous with Ethiopian specialty coffee.
Fully Washed Method:
This method utilizes washing and fermentation to remove the fruit pulp, skin, and mucilage. Farms using the washed method must build washing pools capable of introducing a continuous supply of fresh water. During processing, the fermented beans are placed in the pools and moved back and forth, utilizing the friction between beans and the power of flowing water to wash the coffee beans until they are smooth and clean.
After washing, the coffee beans are still encased in their parchment layer with a moisture content of 50%. They must be dried to reduce the moisture content to 12%, otherwise they will continue to ferment and become moldy and spoiled.
Washed Yirgacheffe: Jasmine fragrance, lemon or lime acidity
