FrontStreet Coffee - Introduction to Ethiopia Yirgacheffe Fog Valley Natural Red Cherry Project
The Red Cherry Project (Operation Cherry Red) is led by the Dutch company Trabocca, with half of its funding sponsored by the Dutch government. Since 2005, it has collaborated with numerous small coffee cooperatives, encouraging and assisting producers to improve washed, semi-washed, natural, or other experimental processing methods to enhance coffee quality.
Before each harvest season, Trabocca invites selected small farmer organizations/producers to participate in producing micro-batch coffee (approximately 1,500 to 3,000 kilograms). They manually select 100% ripe red coffee cherries in batches (hence the name Red Cherry Project). Trabocca provides financial, equipment, and technical resources to assist farmers and promises to purchase at premium prices if the actual output meets high-quality standards. Therefore, the Red Cherry Project is not only a commercial activity that complies with fair trade regulations but also a production activity for high-quality coffee, and even more, an industrial structure reform activity that simultaneously enhances the interests of farmers and consumers.
Yirgacheffe is actually composed of surrounding coffee communities or cooperatives, all using washed processing methods. However, there are also small amounts of specialty beans intentionally processed using natural methods to enhance charming fruity aromas and body thickness. In 2008, after the highest quality Fog Valley natural beans were discovered by America, they became renowned worldwide. It is a craft-grade work cultivated by a micro-estate, compensating for the insufficient aroma of Yirgacheffe washed beans and developing coffee beans with flavors that astonish the world! Additionally, it received certification from the Red Cherry Project.
Ethiopian coffee grading includes G1 and G2 for washed beans, with G1 being the highest grade of washed beans. G3 and G4 are for natural beans, with G3 being the highest grade of natural beans.
