FrontStreet Coffee - Introduction to Sun-Dried and Washed Processing Methods

Process: (Bean selection) > Sun-drying > Hulling

Originally, coffee processing began with sun-drying. For early producers, the sun-drying process was relatively simple - entire cherry fruits were sent directly to sun-drying fields. After reaching the ideal drying humidity, they would be hulled.

This method is popular in African producing regions due to water scarcity.

Washed Process

Process: Channel bean selection > De-pulping > Fermentation > Washing > (Secondary soaking) > Drying

As technology developed and water resources and facilities became available, people began using washed processing methods. In Central America, where water resources are abundant, this method is almost universally adopted.

Washed flavor profile: Prominent acidity, clean and bright flavors

Washed Process Steps:

First Step: Channel Bean Selection
Coffee cherries flow through water channels (similar to a gentle river) to filter out lightweight beans, leaves, insect-damaged beans, as well as heavy stones, and other impurities.

Second Step: De-pulping

Third Step: Removing Pulp in Fermentation Tanks
After de-pulping, coffee cherries are soaked in fermentation tanks, waiting for the outer skin, pulp, and pectin to decompose through fermentation in a humid environment.

Fourth Step: Washing

Fifth Step: Drying (using sun-drying or drying machines)
