FrontStreet Coffee - Swiss Water Process Introduction

Decaffeinated Coffee - Swiss Water Process

No chemical solvents needed, removes 99% of caffeine from coffee beans, suitable for people who want to drink coffee but cannot consume caffeine during certain stages.

First Stage: Extracting Caffeine-Free Solution

First, wash and soak a large quantity of raw coffee beans to extract soluble substances (including caffeine).

After removing the coffee beans, filter the solution through activated carbon filters to remove caffeine, obtaining a caffeine-free solution. This process is called GCE (Green Coffee Extraction).

Second Stage: Caffeine Removal

Pour new raw coffee beans (pre-soaked) into the caffeine-free solution extracted in the first stage. Under specific time, temperature, and flow rate conditions, caffeine continuously dissolves from the new coffee beans, and soluble substances in the caffeine-free solution reach equilibrium. The solution in the container is filtered through a special activated carbon filtration system that removes 99.9% of caffeine (process takes 8-10 hours).

Third Stage: Removing Coffee Beans

Remove the coffee beans and dry them (sun-dried or oven-dried). Roast before use.

Overview

Compared to the "direct solvent method (using dichloromethane or ethyl acetate to dissolve caffeine)" and "carbon dioxide processing method," the Swiss Water Process doesn't require chemical solvents, and the soaked solution can be reused for different batches of processing.

The disadvantage is that the production cost is much higher than the two solvent methods mentioned above, and the extracted caffeine is directly filtered out and cannot be used for other commercial purposes.

Knowledge point: According to the degree of pectin retention, honey processing is also divided into yellow honey, black honey, etc.
