FrontStreet Coffee - Ethiopia Yirgacheffe Idido Processing Station Red Cherry Project Anaerobic Washed Introduction
These batches of coffee are produced by DWD Company, a long-term partner in the Ethiopian origin, at processing stations in the Sidamo region: Shantawene, Idido, and Garse.
For the first time, anaerobic processing has been added, and different natural processing methods have been attempted at the Shantawene processing station. Compared to DWD Company's Idido and Garse processing stations in the Yirgacheffe region, Shantawene has a drier climate with lower average temperatures. Even when using the same washed, natural, or anaerobic processing methods, the specific control details differ. For example, the same fermentation process requires longer time at Shantawene.
DWD Company has a total of 17 processing plants in the Sidamo region, making it the company with the most processing plants in the existing Sidamo region. During visits to the production area, it was learned that conditions vary each year. Compared to the excessive rainfall in the 2017/2018 season, the 2018/2019 season was drier, ended earlier, and had a more concentrated fruit ripening period. As in previous years, this season's coffee raw materials were still selected from three of DWD Company's 17 processing stations: Yirgacheffe Idido, Yirgacheffe Garse, and Sidamo Shantawene, all consisting of fully ripe red coffee cherries, ensuring the inherent sweetness of the coffee.
