What is the Bean Resting Period?

This is a question many people likely ask~

Freshly roasted beans often have what we call a "roasted flavor." The so-called "roasted flavor" mainly manifests as sharper acidity that lacks roundness, sweetness that hasn't reached its optimal state, and a slight astringent sensation lingering in the mouth that affects the overall taste. (This "roasted" sensation is the residual smoky taste inside coffee beans after high-temperature roasting, so it needs a period of maturation and carbon dioxide release to be eliminated.)

The Coffee Bean Resting Process

The so-called coffee bean resting is actually a process of degassing and releasing gases. Freshly roasted coffee undergoes intense chemical changes, and coffee beans after roasting release large amounts of nitrogen dioxide. These gases affect the contact between coffee grounds and water during brewing. If used immediately for brewing, they will impact the coffee's flavor. So when you get beans, check the roasting date first~ Remember to let them rest! (Generally, a resting period of 4-7 days is recommended.)

Bean resting doesn't have a specific timetable; it can only be based on experience or recommendations from the roaster. For very light roasts, the resting time is recommended to be 14 days (because the coffee bean fibers are not completely broken during roasting (like undercooked meat), so oxidation is extremely slow).

Freshest Period

Starting from the end of the resting period, approximately 2 weeks is the freshest period. During this time, coffee beans produce abundant aromas that form the captivating flavors of coffee.

Relatively Fresh Period

Starting from the end of the approximately 2-week freshest period, coffee beans in the packaging gradually decline from their peak state. However, initially, the quality and flavor decline relatively slowly, and the coffee's freshness remains at a high level. We call this the "relatively fresh period," which lasts for about 1 month. Finishing the roasted coffee beans before the end of the "relatively fresh period" is something every coffee enthusiast and coffee shop owner should strive to achieve.

Disposal Period

Starting from the end of the approximately 4-week relatively fresh period, the quality and flavor of roasted coffee beans are significantly diminished and can hardly be called "fresh," unable to meet the discerning demands of professionals. However, they are still acceptable for mixing with milk and chocolate sauce to make specialty coffee.

From the freshest period to the disposal period totals 10 weeks - neither too long nor too short. Consumers should make the most of this time. Roasted coffee beans past the disposal period, even if unopened, will have sharply diminished flavors with no freshness remaining, making them not worth tasting!

Knowledge Point

One way to reduce degassing is to increase the resting time, allowing the oxidation reaction of coffee beans to gradually stabilize, and the flavors will become more balanced.
