FrontStreet Coffee - Introduction to Colombian Huila
Colombia is the world's third-largest coffee exporting country, primarily producing Arabica coffee, and is also the country that exports the most Arabica beans. Colombia is rich in natural resources, with coffee, flowers, gold, and emeralds being particularly renowned as the "four treasures." Located in the northwest of the South American continent, Colombia borders Panama in Central America. From an aerial view, its western side appears as if scratched by a cat, leaving three vertical claw marks from north to south. The country's famous producing regions are scattered throughout these Andes Mountains, which are covered with fertile volcanic soil.
Huila Province is located in the southern part of the Central Mountain Range in southern Colombia and is the country's most renowned specialty coffee producing region. This area consists of hills surrounded by mountains, with cultivation elevations above 1,500 meters. Colombia's most important rivers converge here, bringing abundant water resources and moisture.
Contrary to the common impression of bulk Colombian coffee as balanced and smooth, many small-farm micro-batch produced Colombian specialty coffees actually possess distinct regional flavor characteristics. In recent years, with the international market's emphasis on coffee quality and requirements for specialty coffee, there has been a gradual shift away from the original bean size-based grading system. Instead, the focus has moved to micro-regional selections, where dozens of small farmers provide their individual harvests that are consolidated into micro-batches for sale. This approach allows for cupping each batch individually, directly selecting many excellent-quality specific small-farm coffees.
Colombian Huila coffee beans are mostly processed using the washed method. First, the skin and pulp of the coffee fruit are removed, then the beans are soaked in water tanks for fermentation, followed by washing with clean water and drying. Washed coffees typically have clean flavors, bright mouthfeel, and pleasant acidity, reducing some of the flavor defects found in natural (dry-processed) coffees.
Roasted Colombian coffee beans release a sweet aroma, rich and full-bodied, with bright, high-quality acidity, excellent balance, and sometimes nutty flavors. The combination of acidity, bitterness, and sweetness is perfectly harmonized.
Among all coffees, Colombian coffee offers the best balance - rich and full-bodied, with a soft, smooth entry that is both complex and well-balanced. It features notes of dark chocolate and nuts, with mid-palate flavors concentrating on the rear upper mouth. When swallowed, there's a viscous sensation in the throat, and the aftertaste carries a delicate acidity. The finish is sweet, leaving a pleasant lingering sweetness that instantly revitalizes you!
