The soil, climate, and altitude of coffee-growing regions are the fundamental elements that shape coffee flavor. Coffee grown in different regions naturally has vastly different taste profiles.
Coffee Origins and Flavor Profiles
Brazil: Some varieties produce Robusta with strong flavor and chocolate aftertaste.
Colombia: Relatively mild flavor with good balance, low acidity, and fruity aftertaste.
Indonesia Mandheling: Features earthy aromas or smoky flavors, with bitter cocoa aftertaste and rich body.
Ethiopia: The birthplace of coffee with high variety diversity. Many are described as having syrupy sweetness, citrus tartness, and strawberry or blueberry aftertaste.
Kenya: Clean flavor with berry notes and slightly tomato-like acidity.
Jamaica Blue Mountain: Balanced sweet, sour, and bitter notes - mild, aromatic, smooth, with dark chocolate flavor.
Costa Rican Honey Process
Costa Rican coffee is famous for its "honey process" - an innovative local processing method. This method involves removing the coffee cherry's skin and pulp while preserving the mucilage surrounding the coffee bean. The beans with mucilage are then placed outdoors for sun-drying. Because the mucilage is relatively sticky and has high sugar content, it wraps around the green coffee beans like honey during processing, hence people vividly call this coffee mucilage "honey," and the entire process is called "honey processing."
Common honey processing methods include: Yellow Honey, Red Honey, and Black Honey.
Yellow Honey: About 40% of mucilage is removed; drying requires the most direct heat absorption, receiving maximum sunlight exposure, taking about 8 days to reach stable moisture content.
Red Honey: About 25% of mucilage is removed; compared to yellow honey, drying time is longer, and direct sun exposure time is reduced, sometimes using shade nets, taking about 12 days.
Black Honey: Almost no mucilage is removed; drying takes the longest time, at least 2 weeks, using coverings to avoid excessive sunlight and prevent too-rapid drying, allowing more complete sugar conversion.
Black honey preserves about 80% of the mucilage, and their most obvious difference is that they are sweeter than yellow and red honey varieties.
