Whiskey sherry barrels, as whiskey drinkers know, are oak barrels used in the whiskey industry for aging by sherry wineries. Sherry is a famous fortified wine produced in the sunny Jerez region of southern Spain. The production of sherry must go through the maturation process of the Solera System.
This bean - Sherry comes from Honduras. The magic of this washed - whiskey sherry barrel low-temperature fermentation process lies in using aged oak barrels, where freshly picked coffee fruits are finely washed and then placed inside for fermentation, followed by shade drying. This bean is first finely washed after picking, then placed in Scottish whiskey oak barrels for low-temperature fermentation for 30-40 days at a fermentation temperature of 15-20°C, followed by shade drying.
