Why Are African Coffee Beans Sour? The Clean, Clear Taste and Sweet Aftertaste of Washed Yirgacheffe
FrontStreet Coffee's Introduction to Yirgacheffe Coffee
Africa is the third largest continent in terms of global coffee production, after Central and South America and Asia. Africa's best beans come mainly from Ethiopia, Kenya and Yemen. Ethiopia is the largest Arabica producer in Africa. Yemen, at the southern tip of the Arabian Peninsula and facing Ethiopia across the Gulf of Aden, is geographically part of West Asia, but by coffee tradition it has always been grouped with the African producing regions.
Ethiopia is one of Africa's main Arabica producers and is widely recognized as the birthplace of coffee. Its native Heirloom varieties, ancient and high-quality, express distinct characteristics in each Ethiopian growing region. Arabica was most likely first discovered in southern Sudan, but it only began to flourish once it reached Ethiopia, where people started consuming the fruit - at first as a fruit rather than a beverage. Yemen was the first country to cultivate coffee trees deliberately, yet Ethiopia had been harvesting wild coffee fruit even earlier.
Ethiopia's geography suits coffee exceptionally well. Its nine major coffee-producing regions radiate from the capital, Addis Ababa: Harar to the east; Sidamo to the south, where Yirgacheffe is the most celebrated coffee town; the Kaffa Forest to the southwest, whose famous coffee towns from north to south include Teppi, Gimbi and Limu; and Illubabor to the west, with Lekempti to the north and south.
Ethiopian coffee is divided into two types according to processing: washed and sun-dried.
Washed beans are made from freshly harvested, fully ripe fruit. Carefully selected, clean cherries must be pulped on the same day they are picked, then fermented, washed, dried and hulled.
Sun-dried beans are mostly harvested by families, who dry the red cherries on cement patios or raised beds before hulling and sorting.
The natural characteristics of coffee beans include size, shape, acidity, texture, flavor and aroma. Ethiopian beans are small and aromatic, and their flavor profiles are extraordinarily diverse, ranging from citrus such as bergamot and floral notes to candied fruit and even tropical aromas. The best washed coffees can be elegant, complex and delightful, while the finest sun-dried coffees offer exuberant fruit aromas with unusually captivating character.
Coffee from this region is genuinely exceptional. Many washed Yirgacheffe coffees carry explosive aromas with rich citrus and floral notes and a light, elegant mouthfeel. This is unquestionably one of the best and most interesting coffee regions in the world: its finest coffees command premium prices, and to many drinkers they taste more like Earl Grey tea than coffee. They are absolutely worth trying. The region also produces sun-dried coffees of unusual and delicious character.
Knowledge Point: Arabica is one of the two most important varieties in the commercial coffee industry; the other is Robusta.

FrontStreet Coffee Recommendation
If you want to understand the Ethiopian region, begin with the most classic bottle on our shelf: FrontStreet Washed Yirgacheffe. It is known for white jasmine, bright citrus and lemon acidity and a tea-like body, and its modest price has made it the first specialty coffee for a great many drinkers.
To go deeper into a single washing station, FrontStreet Gudiding Cooperative comes from a village at the southeastern edge of Yirgacheffe in the Worka district, at altitudes of roughly 1,700-2,100 meters, where the coffee trees are planted above 1,800 meters. Once part of the Worka cooperative under the YCFCU union, Gudiding was later recognized as a single origin on its own as buyers pursued traceability. It follows the most traditional washed processing, and the result has none of the bitterness often associated with coffee: fresh, bright citrus and lemon acidity with jasmine perfume - the cup that many drinkers fall for on the first sip.
For the natural-process alternative, FrontStreet Natural Red Cherry uses only fully ripe, sound cherries, dried on raised beds with frequent turning over three to five weeks. Carrying the fruit with it through drying, it keeps the classic Yirgacheffe character while adding tropical fruit: citrus acidity, juicy berry, honeyed sweetness and a creamy, smooth body.
