FrontStreet Coffee - Introduction to Pour-over Coffee Process
Slowly brewing a cup of coffee by yourself is also a way to relax. Play some music you love, grind slowly, inhale the coffee aroma as if you're in a secluded garden valley. Adjust the water temperature, prepare the filter cup, serving pot, digital scale, and filter paper. Pour hot water through the filter paper to make it fit perfectly, as if whispering secrets to the coffee. Pour water slowly, wait, observe, and contemplate—it's as if time stops in this moment... Slow down, let yourself slow down, adjust your direction. The coffee and life that come from this method seem to differ from any other. Enjoy and reflect!
Pour-over coffee is the extraction method that best showcases the unique flavors of coffee beans from different origins.
Step 1: Preparation
First, fold a properly sized filter paper and place it on the filter holder. Place the filter holder on a cup with appropriate capacity to hold the coffee liquid.
Step 2: Rinse the Filter Paper
Then pour an appropriate amount of hot water over the filter paper to remove any possible fluorescent agents and unpleasant pulp taste from the paper, while also allowing the filter paper to adhere smoothly to the filter holder.
Step 3: Add Coffee and Heat Water
Place an appropriate amount of ground coffee in the filter paper and spread it evenly. Pour an appropriate amount of hot water into a long-spouted kettle. The water temperature should be between 85-92°C, adjusted according to personal preference.
Step 4: The Pour
Finally, hold the kettle and slowly and evenly pour in a clockwise circular motion from the center, layer by layer in fine detail until all the coffee grounds are saturated. Use approximately 20-30ml of water and let it sit for 30 seconds for blooming. If done correctly, the wet coffee grounds will expand as if fermenting.
After the blooming ends, hold the kettle and pour again, still using the clockwise circular method, pouring in fine, continuous circles from inside to outside, then clockwise from outside back to the center point. The total water amount should be approximately 1:14 ratio. Wait for the extraction process to complete (within 2 minutes), remove the filter paper, and you can directly enjoy your coffee.
Knowledge Point: Medium Grind
Medium grind: gravel-like texture, sized between coarse sugar and regular sugar, suitable for drip brewing (paper filter drip) method.
