"Optimal Flavor Period"

When buying coffee, do you still look at the expiration date on the packaging? We want to tell you something more important: the optimal flavor period of coffee is not equal to its shelf life. What you should pay attention to is the roasting date.

For freshly roasted coffee beans, although the flavor will change over time in the next 1-2 weeks, offering an additional journey to witness the rise and fall of coffee like flowers blooming and withering, you can usually taste the best flavor within about a week. Is the flavor period of coffee beans 15 days? From the roaster's experience, the flavor period of coffee beans is about 15-30 days (depending on the roast degree), meaning after the aging period, within 7-20 days from the roasting date is considered the optimal flavor period.

"Aging Period"

The process of waiting for the optimal flavor period is what we call aging (generally 4-7 days for single-origin beans, 7-10 days for espresso beans). It's similar to how red wine needs moderate oxidation after opening to become smooth and layered; but if left too long, the wine will turn sour. Freshly roasted coffee beans sometimes have a grassy, peasy taste, which will disappear after a night. On the other hand, new beans have a fresh-out-of-the-oven bread aroma that those who insist on aging might never taste.

"Blooming Period"

Allowing the remaining CO2 in coffee beans to escape and using oxidation to make the flavor more rounded and smooth. To remove uncomfortable bitterness from dark roast beans, the blooming time can be extended. If light roast beans have already had sufficient aging time and their flavor development is complete, too long a blooming time will cause the coffee beans to lose aroma and become flat in taste.

Therefore, blooming time is inversely proportional to aging time.

Knowledge Point: The source of coffee's aroma and flavor is highly volatile. Therefore, the longer coffee beans are stored, the more aroma and flavor are lost.
