Undoubtedly, no one likes to drink expired coffee, but brewing freshly roasted coffee beans directly will surely disappoint you with its flavor. The reason is that the coffee is still in a state of extensive degassing at this time. Whether you are a roaster or a brewer, you must understand degassing. This article will help us understand what degassing is, how it affects the coffee you brew, and how to perform these actions.
After coffee beans complete roasting, a series of chemical reactions occur, simultaneously producing large amounts of carbon dioxide. Most of the gas remains inside the coffee beans and slowly releases over time. During the first few days after roasting, the degassing effect will be very vigorous. This is why we see small bubbles when brewing very fresh coffee.
Espresso uses high-pressure extraction methods. When coffee beans still contain a lot of carbon dioxide, the pressurized hot water flowing through the coffee grounds will activate the carbon dioxide and generate force, which to some extent hinders the extraction of coffee flavors. The most common phenomenon is the feeling of unstable flow rate during espresso extraction.
Therefore, many coffee shops, when receiving freshly roasted espresso beans, will let the coffee beans "rest" and degas in packages with one-way degassing valves for 5-20 days to help ensure stability during coffee extraction. This is what we usually call "the effect of bean resting."
Additionally, storing freshly roasted coffee beans in bags with degassing valves, compared to placing them directly in completely sealed glass jars, results in more complete flavor development in the former.
Degassing Time
For light-roasted single-origin beans, you can start tasting them 1 day after roasting, during which you can also experience the flavor changes that occur in the coffee over time.
For medium-dark roasted single-origin and espresso beans, it's recommended to let them rest for about 3-5 days.
For French heavy roast (roasted to the end of second crack) espresso beans, it's recommended to let them rest for about 10 days.
It's recommended to purchase freshly roasted coffee beans and store them properly to avoid missing the optimal tasting period.
