Generally speaking, coffee beans do not have male and female distinctions. Coffee trees belong to the Rubiaceae family of plants. Mature fruits are as red and lustrous as cherries. When the outer peel of a mature coffee fruit is removed, you'll see round coffee beans clustered together. When split open, there are two beans: one side is curved, and the other is flat, which we call flat beans.

Most coffee beans we normally purchase belong to the flat bean series!

Peaberry refers to the special fruit where only one coffee bean develops inside a coffee cherry. Due to its generally spindle-like shape, to distinguish it from ordinary flat coffee beans, it's called round bean, or what's known as peaberry. Other normal beans are called flat beans.

Peaberries account for approximately 5-8% of coffee beans. Most peaberries grow on the outer side of the tree crown, where they are more susceptible to external interference. Therefore, there's also a theory that peaberries are actually the result of some external force. Due to their low yield and the need for manual selection from flat beans, peaberries are indeed quite expensive. For most people, especially for commercial use, there is absolutely no necessity for this.

Defect Rate: Green beans allow 3% defects. After fine roasting in small batches, almost defect-free.

Dry Aroma: Blackberry, dark chocolate

Wet Aroma: Blackberry, grapefruit, brown sugar, chocolate

Taste: After deep city roast, citrus acidity remains prominent, with full aroma, high body, long aftertaste, distinct layers, and the sweetness and aroma of dark chocolate in the finish are long-lasting.

Recommended Brewing Methods: Hand-pour, French press, AeroPress

Water temperature: 91°C
