Differences Between Peaberry and Regular Coffee Beans: Flavor Characteristics and Taste Profiles
Some observant coffee lovers have pointed out to FrontStreet Coffee that they've found a few coffee beans among a batch that look different from the others. These particular beans are shaped like complete elliptical spheres, distinctly different from regular coffee beans that have one flat side.
Male Bean? Female Bean?
Some people claim that the completely elliptical spherical beans are "male beans," while the commonly seen flat-sided beans are "female beans." "Male beans" are said to be very rare, accounting for only about 5% of all coffee beans. While this male-female bean terminology has been circulating for quite some time, coffee beans actually have no gender distinction. This concept was likely created as a marketing strategy by some Southeast Asian merchants to promote these unusually shaped coffee beans.
Although coffee beans have no gender distinction, there are indeed two different forms of coffee beans found on the same variety (even on the same tree). Therefore, people refer to these rare elliptical spherical coffee beans as "Peaberries," while the coffee beans we commonly encounter are correspondingly called "flat beans."
How Are Peaberries Formed?
We know that normal coffee fruits typically contain two coffee beans (seeds). The flat side of regular beans comes from their natural development as two beans forming one fruit. Peaberries are special because, due to environmental factors or genetic influences, one ovule inside the fruit fails to be pollinated. This provides double the space for the other ovule to develop, resulting in a fruit that contains only a single coffee bean.
Typically, peaberries are slightly smaller in size than flat beans of the same variety. If flat beans are around 16-18 screen size, peaberries usually fall in the 14-15 screen size range.
Of course, in addition to one-bean peaberries and two-bean flat beans, there are also three-bean triangular beans found in single fruits. However, these are usually treated as defective, underdeveloped beans and are removed, making them quite rare among roasted coffee beans.
Do Peaberries Have Better Flavor Than Flat Beans?
Coffee-producing countries like Kenya, Tanzania, Jamaica, and Hawaii specifically select and sell peaberries separately, often at premium prices.
Consequently, people might associate the higher price, lower yield, and unique shape with superior flavor compared to "ordinary" beans. In reality, there isn't a significant flavor difference between peaberries and flat beans from the same origin and variety. The reason some producing countries separate and sell peaberries independently is that their grading systems classify coffee beans based on size, with larger beans commanding higher prices. Since peaberries are naturally smaller than flat beans, they would typically fall into the 14-15 screen size category. By separating them and emphasizing their rarity, producers can price them at the 17-18 screen size level.
From a roasting perspective, smaller and uniformly sized coffee beans roast more evenly, which can enhance flavor expression—this is indeed an advantage of peaberries. However, in countries that don't grade coffee by size, there's no need to separate the slightly smaller peaberries. This is why you'll always find a few distinctive-looking peaberries mixed in with regular beans in a bag of coffee.
