Single-origin coffee is pure coffee made from single coffee beans produced from a single origin, generally consumed without milk or sugar. Compared to the fancy coffees that people usually drink, such as lattes, mochas, and cappuccinos, single-origin coffee is considered a niche field.

Before trying it, many people might be afraid that single-origin coffee will be bitter and hard to swallow, but in fact, a good single-origin is not just about the bitterness of coffee. Fruit acidity, floral nectar sweetness, coffee richness, and sometimes a faint salty taste of sea breeze blooming on the taste buds will definitely make you fall in love with coffee.

But what kind of single-origin coffee each person likes can only be known by tasting it personally. Moreover, the wonderful thing about single-origin coffee is that different brewing methods have different effects on the coffee's taste. The same person cannot make two cups of coffee with the same taste, just as a person cannot step into the same river twice.

SOE, which became popular in 2007, has gradually matured since 2010. Most typically, those of us who follow WBC will notice that most contestants in WBC use SOE coffee (WBC: World Barista Championship), which is single-origin coffee. For example, if there are two coffee beans, A and B, A uses Brazilian and Mandheling, while B uses Mandheling, then B can be considered SOE.

SOE being labeled as very expensive is just a wrong concept. It can also be very accessible and acceptable to the general public. As long as there are beans with exciting flavors, the recipe for espresso coffee beans does not need to be very complex. A single bean can still be made very exciting. Of course, this is also a major trend in modern coffee~

However, SOE also has its drawbacks, namely its strong seasonality. Because the quantity of coffee beans purchased after each season is decreasing, while the cleanliness of the flavor has been improved, single-origin beans are not very stable. Because coffee is an agricultural product, its production is unstable due to many factors such as the year's weather, cultivation, planting, etc. Therefore, I suggest that if you want to choose SOE, try to make it seasonal, so that it will not cause losses to your coffee shop.

The coffee beans used to make SOE and those used to make pour-over coffee have very different roasting methods. This is a pursuit of roasting skills and also a further exploration of specialty coffee. Because coffee beans that can be roasted in SOE style must have many characteristics and advantages (such as acidity, richness, aftertaste, aroma, etc.).
