Coffees from different regions all have distinct styles, and Brazilian coffee happens to be very suitable for the general public's taste. Coffee flavors from certain regions have unique local characteristics that are highly praised. Due to the relatively low altitude of the entire Brazilian production area compared to Central America, combined with various different cultivation backgrounds, Brazilian coffee has a slight acidity and a quite complex aromatic profile. For example, coffee produced in the northern coastal regions of Brazil has a distinctive iodine flavor that unconsciously reminds people of the sea after drinking. They are mostly exported to North America, the Middle East, and Eastern Europe, and are deeply loved by locals.
Brazil is known as the kingdom of coffee, it is the world's largest coffee producer and exporter, accounting for over 30% of international coffee production. One-sixth of the world's coffee is produced here. Brazil is also the second-largest coffee consuming country in the world after the United States. Approximately 300,000 farmers are engaged in coffee cultivation here. It carries the important responsibility of Brazil's economic development and also influences the development of international coffee. It's worth knowing that most instant coffee uses Brazilian coffee as its main raw material.
Semi-washed processing can be considered a combination of natural and washed processing methods. Its concept is to use less water than the washed method to produce coffee with cleaner flavor than natural processing and a fuller body than washed processing. This processing method is popular in Indonesia, Mandheling and other regions, and Brazil has also started using the semi-washed method in recent years.
Selection Process
Like other processing methods, selection is required first. The picked coffee cherries are placed in a water tank. Mature fruits will sink to the bottom, while immature fruits will float on the water surface. Coffee farmers need to first screen out the immature fruits.
Removing Skin and Pulp
The same steps as the washed method: specialized machines are used to remove the skin and pulp, leaving only the coffee beans wrapped in parchment. However, at this point, there is still a small layer of mucilage remaining on them.
Removing Mucilage
The attached mucilage is removed using a mucilage removal machine (Demucilager). Compared to the washed method, this only uses a small amount of water.
Drying
The smooth-surfaced coffee beans are taken out and dried outdoors until the moisture content drops to 12%, at which point they can be stored.
Flavor Characteristics
Semi-washed coffee combines the rich flavor and sweetness of natural processed beans with the cleanliness of washed processed beans - soft but not bland.
