Scientists point out that the coffee genus contains 103 native coffee species (coffee species), among which very few varieties can be artificially cultivated and produce coffee beans with significant commercial value. The three major native coffee varieties we often mention are the outstanding ones: Arabica coffee (Coffea Arabica), Robusta coffee (Coffea Robusta), and Liberica coffee (Coffea Liberica). China's agricultural department has named them: small-grain coffee, medium-grain coffee, and large-grain coffee respectively. Those who travel to Yunnan will easily hear references such as "Yunnan small-grain coffee."

The King of Yunnan Coffee Varieties - Catimor

Catimor, also known as Catimor, was cultivated by the Portuguese in 1959. It possesses three-quarters Arabica bloodline and one-quarter Robusta bloodline, with extreme robustness, strong disease resistance, and heat tolerance being its greatest characteristics. For coffee producers, it is an ideal commercial variety in terms of yield, maturity period, pest and disease resistance, and flavor. More and more specialty-grade Yunnan Catimor coffees with clean flavors, no defects, and high sweetness are emerging, which is pleasantly surprising.

This emerging processing method - anaerobic natural processing - has provided a satisfactory answer. The fully ripe cherries picked are sealed in thin film bags, placed in shade for anaerobic fermentation, sun-dried on high trellises, with manually removed under-ripe and over-ripe fruits, and turned evenly... The entire anaerobic natural processing process is extremely meticulous and refined. This coffee bean from Menglian County, Pu'er, Yunnan, uses the anaerobic natural processing method. After cupping, the results are surprisingly impressive.

The coffee plantations in Menglian are all located at altitudes above 1,100 meters, with excellent ecological and climatic conditions, abundant sunlight, plentiful rainfall, and fertile soil, enabling the coffee produced here to show impressive performance in the Yunnan green bean competitions for several consecutive years (in the 2018 Yunnan Green Bean Competition, both the first and second place winners came from Menglian).
