FrontStreet Coffee - Catimor Coffee Bean Introduction
The unique small-grained coffee "Catimor" from the Baoshan region of Yunnan. As early as 1958, Baoshan small-grained coffee won first prize at the London International Tasting Competition in the UK and was even hailed as "the crown of national coffee" in mainland China. Catimor coffee is a subspecies of Arabica. "Not bitter, not astringent is the basic requirement for specialty coffee, but Catimor is superior to other specialty coffees! The special 'throat rhyme', with a slight walnut wood aroma, fruity acidity, and the layered sweetness in the aftertaste." These are the key characteristics of Catimor's flavor profile.
Yunnan is China's main coffee bean producing region. Located south of the Tropic of Cancer, Yunnan belongs to the subtropical mountainous climate zone, with unique plateau red soil that is fertile and loose, and a mild climate, particularly suitable for planting small-grained coffee varieties. Today, FrontStreet Coffee will help everyone understand the characteristics and flavor profile of Yunnan Catimor beans.
In 1902, a French missionary named Tian Deneng brought coffee from Vietnam to Zhukula, a mountain village in Binchuan County, Dali, Yunnan Province. To this day, descendants of that batch of coffee still survive, with ancient coffee groves telling stories of a century past in the morning dew and evening glow.
Catimor, also known as Catimor, was cultivated by the Portuguese in 1959. It possesses three-quarters Arabica bloodline and one-quarter Robusta bloodline, with extreme robustness and strong resistance to leaf rust disease being its greatest characteristics. For coffee producers, whether considering yield, maturity period, disease and pest resistance, or flavor, this is a relatively ideal commercial variety. Catimor beans are round and thick, while Typica beans are thin and long, and Catimor's center line is disordered.
However, once Catimor is planted in high-altitude areas, its inherent "inferior characteristics" are undoubtedly exposed, while the advantages of older Arabica varieties closer to native species, such as Typica and Bourbon, are fully demonstrated. Currently, various Catimor series are planted on a large scale in Yunnan, China, and coffee farmers value its three major advantages: short trees, high yield, and disease resistance (resistance to coffee borers and leaf rust).
Somewhat unfortunately, Yunnan Catimor has not yet won any authoritative awards and cannot be considered specialty grade, with improvement and exploration work having a long way to go. Catimor fruits mature quickly and have high yields, requiring sufficient fertilizer supply and shade. Additionally, Catimor's high yield corresponds to a relatively short commercial lifespan, averaging only ten years. When planted at low altitudes, Catimor's cup performance shows no clear superiority or inferiority compared to other commercial varieties. When planted above 1200 meters altitude, Catimor's cup flavor is significantly inferior to Bourbon, Caturra, and Catuai.
