Dry Aroma: Honey sweetness, peach, floral notes, red wine aroma, tropical fruits, pineapple, jasmine fragrance
Wet Aroma: Very sweet syrup, red berries, floral notes, buttery aroma, vanilla
Cupping Notes: Excellent clarity, delicate buttery texture, wild honey, bergamot, caramel, cane sugar, creamy, jackfruit, with a very delicate aftertaste.
In 1996, the Peterson family purchased a coffee farm in the Jaramillo region of Boquete. This farm is known for its suitable coffee growing altitude of 1,450-1,700 meters and its coffee's elegant citrus aroma. It's a historic farm containing various coffee varieties planted by previous owners, with quite diverse types. Many newer growing areas didn't begin harvesting until 2003-2004. In 2002, Daniel Peterson of the second generation suddenly had an idea, thinking that perhaps not all coffee beans in the entire region had such good flavor, but rather the special taste of coffee beans from a particular area mixed within created this coffee profile.
Therefore, he began cupping different varieties of beans from the entire farm. Finally, in a small valley at the highest altitude of the farm, he found this special coffee tree variety, which is what we sell at extremely high prices as "Esmeralda Special"! Coffee beans from other regions are certainly of good quality, but not as stunning as Esmeralda Special. This natural process Geisha batch was selected as a special batch after cupping all natural process Geishas together with the Peterson family before the Best of Panama and Hacienda La Esmeralda auction events. Among Hacienda La Esmeralda's natural process Geishas, this batch features a relatively gentle flavor profile with juicy characteristics.
Knowledge Point: Due to its tall trees and low yield, the Geisha variety was once disliked by Panamanian growers, who used it as a windbreak for other high-yield varieties.
