Ethiopia is perhaps the most attention-grabbing among all coffee-producing countries. In addition to the unique and outstanding coffee produced within its borders, mysterious legends associated with local coffee add to its charm. Ethiopian coffee, with its unrestrained floral and fruity aromas, has opened many coffee professionals' eyes to the diversity of coffee flavors.
Ethiopia is recognized as the birthplace of coffee, and this statement is not wrong, but it needs some explanation. The coffee industry has always regarded Robusta as Arabica's ugly sister, until an interesting genetic discovery unveiled this mystery: once when scientists conducted gene sequence comparisons, they discovered that these two tree species are not siblings or cousins at all—Robusta is actually one of Arabica's parents. The most likely birthplace of Arabica was in southern Sudan, where Robusta cross-pollinated with another coffee species, Eugenioides, thus creating the entirely new Arabica.
Arabica
All premium coffee in the world comes from the Arabica species, accounting for about 70% of global coffee production. Its flavor is rich, with excellent acidity and floral notes, but growing conditions are demanding—it requires high-altitude cultivation, grows relatively slowly, and is extremely susceptible to pests and diseases.
Yirgacheffe
Coffee from this region can be said to be exceptionally unique. Many washed coffees from Yirgacheffe carry explosive aromas, rich citrus and floral-fruity notes, with a light and elegant taste. For many people, these coffees taste more like Earl Grey tea and are absolutely worth trying. This region also produces natural process coffees with unique and delicious flavors.

Coffee Flavor Profile
Ethiopian coffee flavors are extremely diverse, ranging from citrus (such as bergamot), floral notes to candied fruits and even tropical fruit aromas. The best washed coffees may exhibit elegant, complex, and delicious notes, while the best natural process coffees display unrestrained fruitiness and unusual captivating aromas.
