Coffee is currently the most aromatic food, with scientists discovering that coffee beans contain over 1200 different aromas. Excluding the sharp acidity, astringency, burnt bitterness, and chemical-medicinal flavors caused by under- or over-roasting, there are still 600-800 flavors remaining. When categorized by continent, coffee flavors can be divided into three major regions: the Americas, Asia, and Africa.

Asian growing regions are mostly in Southeast Asian countries, characterized by soil that can produce herbal medicine flavors such as licorice lozenges and guilinggao (herbal jelly), often accompanied by very pleasant sweetness. They easily develop honey and caramel sweet aromas with a very long aftertaste.

American growing regions are mostly in Central and South America, offering some familiar flavors such as nuts, peanuts, and chocolate. Because people are very familiar with these flavors in daily life, they can often taste these notes when drinking coffee in cafés.

African growing regions have relatively small total production, featuring floral notes of roses, flower tea, and jasmine, as well as fruit aromas of strawberries, blueberries, oranges, and lemon peel. Strong-washed coffee can reveal relatively strong rose aromas, while lighter washed coffee can exhibit flower tea and jasmine notes.

South America brings together the world's first and third largest coffee-producing countries, holding a significant position in both global coffee production and quality. South American coffee flavors are well-balanced and are often used for coffee blends.

Brazil

Since the mid-19th century, Brazil has been the world's largest coffee-producing country, ranking first in total production and accounting for about 1/3 of global output. Brazilian coffee beans have a neutral character and can be enjoyed as single-origin (though somewhat monotonous) or blended with other types of coffee beans to create comprehensive coffee blends. They are generally considered indispensable beans for blending.

Colombia

Colombia is the world's third largest coffee-exporting country, accounting for about 15% of global production. Colombian coffee beans are of excellent quality, with rich and unique aromas, sweetness balanced with acidity, and moderate bitterness, making them highly suitable for both single-origin drinking and blending.

Key point: Coffees from different growing regions each have their own flavor characteristics, but coffees from the same major growing region share certain commonalities.
