Coffee Bean Resting Period

The so-called bean resting refers to allowing freshly roasted coffee beans to naturally release gases for a period of time while isolated from oxygen, thereby reducing the carbon dioxide content.

This is because excessive carbon dioxide can significantly hinder the contact between hot water and coffee powder during the brewing process, which mainly affects high-pressure espresso extraction. Since the extraction time is only a few tens of seconds, any slight change in factors will have a significant impact on the result, so the conditions for making espresso are more demanding - correction of powder coarseness, pressure distribution, hot water temperature and contact time, including the carbon dioxide content within the coffee powder (adjusted through bean resting). However, if roasted coffee beans are left for too long, the flavor will also gradually deteriorate, but espresso extraction has a relatively high tolerance for the resting time of coffee beans.
