Jamaica is a country located in the Caribbean, producing the world-famous Blue Mountain Coffee. The Blue Mountains feature steep terrain, fresh air without pollution, abundant rainfall throughout the year, and significant temperature differences between day and night, boasting uniquely fertile new volcanic soil. Most importantly, every afternoon, clouds and fog envelop the entire mountainous area, not only providing natural shade for coffee trees but also bringing abundant moisture. These superior geographical and climatic conditions make Blue Mountain Coffee's taste and aroma outstanding, allowing it to stand above other similar varieties.
In addition to exceptional natural conditions, Blue Mountain Coffee's every process from planting, picking, to washing, hulling, and roasting is extremely meticulous with strict standards. For example, there are clear regulations on what organic fertilizers to use during different growth periods, and many processes including picking and subsequent procedures are completed by hand, with the majority of participants being female workers. To ensure the quality of coffee during transportation, Jamaica is the last country that still uses traditional wooden barrels for packaging and transporting coffee. Blue Mountain Coffee has a rich, mellow flavor with balanced acidity, sweetness, and bitterness - this is the true Blue Mountain taste.
Coffee Bean Resting Period
The so-called bean resting refers to allowing freshly roasted coffee beans to naturally release gases for a period of time while isolated from oxygen, thereby reducing the carbon dioxide content.
This is because excessive carbon dioxide can significantly hinder the contact between hot water and coffee powder during the brewing process, which mainly affects high-pressure espresso extraction. Since the extraction time is only a few tens of seconds, any slight change in factors will have a significant impact on the result, so the conditions for making espresso are more demanding - correction of powder coarseness, pressure distribution, hot water temperature and contact time, including the carbon dioxide content within the coffee powder (adjusted through bean resting). However, if roasted coffee beans are left for too long, the flavor will also gradually deteriorate, but espresso extraction has a relatively high tolerance for the resting time of coffee beans.
Knowledge Extension
As time goes by, the flavor intensity of coffee beans will weaken day by day, which is due to the combined effects of time and oxygen.
