Introduction to Blue Mountain Flavor Coffee and Coffee Bean Resting Period
"The best example of Jamaica's Blue Mountain coffee is that it has a fragrant, smooth, and rich quality that feels like a gem to me. It's as precious as a gem. It's complex but very mild, it's sweet, and it has a very strong body. You must taste it to know what I'm talking about." Unique growing conditions and extremely careful handling throughout all production processes have made Jamaica Blue Mountain coffee very famous. It has a rich and mellow flavor, with a perfect balance of coffee's sweetness, acidity, and bitterness, completely without any bitterness, only moderate and perfect acidity, with lasting fruity notes.
In fact, "Blue Mountain Blend" has nothing to do with Blue Mountain; the reason this situation arose is because early Blue Mountain coffee was very rare and expensive. Operators created coffee close to Blue Mountain's taste by mixing beans with dark roasting based on Blue Mountain's flavor profile. Therefore, conscientious merchants in domestic and international markets will tell customers that this is "Blue Mountain Blend," "Blue Mountain Style," or "Blue Mountain Flavored" coffee beans, not genuine Blue Mountain coffee. Real Blue Mountain and Blue Mountain flavor are two different concepts. Generally, other coffee varieties are roasted to imitate the taste of Blue Mountain coffee. The beans in "Blue Mountain Blend" are mixed, with relatively large differences in shape, making them easier to identify. Also, don't believe in "premium Blue Mountain" that costs only a few dozen yuan per pound or "Blue Mountain coffee" that costs only thirty-something yuan per cup.
Coffee Bean Resting Period
Freshly roasted coffee beans need several days of "resting period" for their flavors to reach optimal quality.
One main purpose of resting is to let the beans degas: freshly roasted coffee beans still contain carbon dioxide and other gases produced during roasting. If you drink them immediately, there will be some smoky taste. Only when the smoke and off-flavors dissipate will the good flavors slowly emerge. On the other hand, even after cooling, slow chemical reactions continue inside the roasted beans, developing subtle flavor changes.
The length of the resting period is mainly determined by the roast level - the lighter the roast, the shorter the resting period needed, sometimes just one day. Conversely, the darker the roast, the longer the resting period needed. Basically, no roaster will accurately tell you the resting period for a specific bean because it's too difficult - each bean requires a different optimal resting period due to slight variations in variety, moisture content, roast level, and other factors. Beans must be stored in bags with one-way degassing valves; otherwise, carbon dioxide cannot be released.

In 1950, the Jamaican government established the Jamaica Coffee Industry Board to set quality standards for Jamaican coffee, supervise the implementation of these standards, and grant special official seals to exported raw and roasted coffee. It is the highest-level national coffee institution in the world.
