The author recommends customers choose coffee beans 4-7 days after roasting, as these are typically defined as fresh coffee beans. However, when asking customers about this, they often impatiently or even rudely say: I'm looking for coffee roasted yesterday or today. Some people claim that coffee only needs 24 hours of bean resting, with the third day being the peak flavor period, but this time is actually insufficient for proper bean resting.
After roasting, coffee beans are placed in sealed containers and stored overnight, a procedure performed the next day during packaging or when blending recipe beans. When is the best time to drink coffee after roasting? Buying coffee beans is like buying bread - just buy enough for a week's use. Find the optimal tasting period (peak flavor), then work backward from when you plan to start drinking the coffee, which can help you determine the ideal roast date, looking for a time three to five days before or after that date.
Typically, if buying coffee to drink immediately, the author believes 8-21 days after roasting is best. However, shops must ensure that roasters or baristas use these beans during their peak flavor period.
Flavor Period (Also Known as Optimal Tasting Period)
The flavor period is the best time to taste the flavor of coffee after roasting. Freshly roasted coffee undergoes a self-fermentation process within a week, making the flavor more perfect. After this stage, oxidation and evaporation begin, and the wonderful coffee flavors gradually dissipate. Therefore, the best tasting period for coffee is within two weeks after roasting. During this time, coffee will have very fresh aromas, abundant oils, and sweet coffee will have obvious aftertaste. Coffee grounds will expand significantly after being soaked in hot water, which is often a simple method to identify freshly roasted coffee.
Extensive practical experience has shown that the flavor period of roasted coffee beans is basically within one month, and when properly sealed, it does not exceed two months at most. After coffee is ground into powder, the surface area increases, accelerating oxidation and evaporation, thus shortening the flavor period. This is why drip coffee bags bought from supermarkets rarely have good flavor.
Coffee that has lost its flavor only retains unpleasant aromas and bitterness, some even becoming sharply sour with rancid tastes, completely unable to represent the characteristics of a brand, origin, or grade of coffee. Therefore, regardless of how good a brand or coffee is, once past its flavor period, it cannot be called good coffee. "Freshness, freshness, freshness" is the prerequisite for good coffee.
