Colombia is the world's third-largest coffee producer and exporter, located in the northwestern part of South America. It is world-renowned for its premium quality, smooth taste, and high-grade character. All of this depends on Colombia's suitable climate, which provides a true "natural pasture" for the cultivation of green coffee beans. Thousands of meters of planting altitude, moderate annual rainfall, and very suitable conditions for coffee growth. Coupled with a mild climate and humid air, coffee can be harvested year-round without seasonal distinction. Therefore, this is why Colombian coffee is of superior quality and its brand is deeply embedded in people's hearts.

The Famous Nariño Region

One of Colombia's most famous producing regions is the Nariño Province region. Its real name is Nariño, which literally translates to "Narino," but is translated as "Nalinglong" in the domestic coffee industry. It is located in southern Colombia, bordering Ecuador to the west, the famous Cauca region to the north, and the Huila region to the east. These three regions (Cauca, Huila, Narino) form the three major producing areas in southern Colombia. The Nariño region has always been known for producing high-quality coffee with rich fruit acidity, good sweetness, medium body, and abundant nutty characteristics.

Pour-over Brewing Steps

Step 1:

Prepare hot water, weigh 18g of coffee beans (using a 1:15 water ratio). Place the folded filter paper into the dripper and rinse the filter paper and dripper with hot water: The filter paper will have a taste, and rinsing helps avoid affecting the coffee's flavor while ensuring better fit between the filter paper and dripper (one of the key techniques).

Step 2:

Heat both the dripper and server simultaneously to avoid the coffee cooling during the filtration process, as temperature affects the coffee's flavor.

Step 3:

Grind the coffee beans (coarseness similar to raw sugar). Pour the ground coffee into the filter and gently tap the dripper to make the coffee grounds evenly distributed and compact, which facilitates even extraction.

Step 4:

Slowly pour 85-90°C hot water (depending on the coffee roast level and grind coarseness) from the center of the coffee grounds, avoiding pouring onto the filter paper (one of the key techniques that requires training to perfectly control water flow and speed). Once the coffee grounds are essentially wet and coffee begins dripping into the server, stop pouring and let it bloom for 30-45 seconds (one of the key techniques). The purpose of blooming is to release gases (mainly carbon dioxide) from the coffee. After the gases are expelled, the coffee particles can absorb water evenly for uniform extraction. Visually, you will see the coffee grounds expand.

Step 5:

After blooming, start pouring hot water in circles from the center (can be done in one or multiple pours). The water flow should not be too large/fast and must remain continuous, which also requires professional training to achieve perfect water control. At this point, the coffee grounds will fully filter and brew, releasing oils, soluble substances, and aromatic compounds continuously, creating an intoxicating aroma.

Step 6:

Stop when the water volume reaches 270ml → Warm the cup and enjoy.

Additional Knowledge

The Nariño Province is located around 1 degree north latitude, closer to the equator, so it receives abundant sunlight throughout the year.
